Banana Oat Bread with Strawberries & Chocolate Chips

    Place the oats in a food processor or blender and process into a flour.

    • 2 1/2 cups wheat-free oats

    Pour flour into a large bowl.

    Whisk in the baking powder, baking soda and sea salt.

    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon sea salt

    Process the bananas, coconut sugar, coconut oil and vanilla until smooth.

    • 3 ripe bananas
    • 1/2 cup coconut sugar
    • 2 tablespoons coconut oil
    • 2 teaspoons vanilla

    Pour mixture into the dry ingredients and stir to combine.

    Fold in the strawberries and chocolate chips.

    • 1 cup strawberries (frozen or fresh)
    • 1/2 cup gluten-free and vegan chocolate chips

    Pour into a parchment-lined loaf pan.

    Bake at 375°F for 35-40 minutes or until golden and toothpick inserted into the middle comes out clean.

    Let cool for about 10 minutes before removing from the pan and placing on a cooling rack. Cool completely before slicing.
